Made entirely with farina integrale — a traditional Italian stone-milled wholegrain flour prized for its depth of flavour and exceptional nutritional integrity — there is no white flour here, no compromise, no shortcut. Just the whole grain, in its entirety, doing exactly what it was meant to do.

The integrale flour brings with it everything the wheat has to offer — the bran, the germ, every last part of the grain left exactly as nature intended.

The result is a loaf with a rich, earthy complexity, a gently nutty sweetness, and a dense, satisfying crumb that cuts cleanly and keeps beautifully. The long, cold sourdough fermentation we use here is essential — it softens the bran, unlocks the flour's natural flavour, and makes every slice easier to digest than a conventional wholegrain loaf.

Robust enough to stand up to strong cheeses and cured meats, tender enough to eat simply with good butter and a little salt.
